About Black Jack Hills Black Jack Hills was originally built by Jim Fair, the owner of Fields of Fair Wineries. The facility originated as an open pavilion, which was used as a gathering place for wine tasting events and church and community gatherings. It was the first commercial licensed winery in the state of Kansas since 1880. From the chicken flying contest to present day, Black Jack Hills has offered a variety of entertainment venues including outdoor concerts and benefits.
